How to make: Harumaki 春巻き

How to make: Harumaki, also known as “Spring Rolls” in English. They are quick to make and store well. IT will take around 20 minutes to make them.

春巻きの皮6 spring roll wrappers
むきえび150g peeled shrimp
れんこん150g lotus root
長ねぎ10cm (30g) long onion (leek)
大葉6 shiso leaves
サラダ油適量Salad oil as needed

酒大さじ11 tablespoon sake
塩小さじ1/31/3 teaspoon salt
おろししょうが小さじ1/21/2 teaspoon grated ginger
片栗粉大さじ11 tablespoon potato starch
水溶き薄力粉Flour mixture
薄力粉大さじ11 tablespoon cake flour
水大さじ11 tablespoon water
酢じょうゆVinegar soy sauce
酢大さじ1/21/2 tablespoon vinegar
しょうゆ大さじ11 tablespoon soy sauce

大葉は軸を切り落とす。ねぎはみじん切りにする。れんこんは粗みじん切りにして水にさらして水気を切り、キッチンペーパーで水気をふきとる。Cut off the stems of the shiso leaves. Mince the leek. Roughly chop the lotus root, soak in water, drain, and pat dry with a paper towel.

えびは1cm幅に切り、叩いてペースト状にする。Cut the shrimp into 1cm pieces and pound into a paste.
ポイントPoint
背わたがある場合は取り除き、水で洗って水気をふきとりましょう。If there are any veins on the shrimp, remove them, wash the shrimp, and pat dry.

春巻きの皮は1枚ずつはがす。Separate the spring roll wrappers one by one.

ボウルにえび、ねぎ、☆を入れて粘りが出るまで混ぜる。れんこんを加えて混ぜる(たね)。In a bowl, mix the shrimp, leek, and ☆ seasonings until sticky. Add the lotus root and mix to make the filling.

春巻きの皮を角を下にしておき、大葉1枚を手前にのせてたね1/6量をのせ、手前から巻き、巻き終わりに水溶き薄力粉をぬってとじる。同様に計6個作る(春巻き)。Place a spring roll wrapper with a corner facing down. Place one shiso leaf at the bottom, add 1/6 of the filling, and roll from the bottom. Seal the end with the flour mixture. Repeat to make 6 spring rolls.

フライパンに底から2cm程度のサラダ油を入れて160℃に熱する。春巻きを入れて焼き色がつくまで3〜4分揚げ、裏返して焼き色がつくまで3〜4分揚げる。Heat about 2cm of salad oil in a frying pan to 160°C. Fry the spring rolls for 3-4 minutes until golden brown, then turn over and fry for another 3-4 minutes until golden brown.

器に盛って酢としょうゆを添える。Serve on a plate with vinegar and soy sauce on the side.
