How to make: Takoyaki, which is a Japanese snack dumpling made with octopus! They’re fun to make with friends and family, and it’s pretty easy too. Make sure you get a takoyaki pan before trying to make it, otherwise, you will have a hard time rolling them into a ball.

Here is my recommendation for a Takoyaki pan! You just plug it in and you’ll be rolling them up in no time. You can also use this pan to make things aside from Takoyaki, such as okonomiyaki and other grilled dishes.

What you need:

材料Ingredients
刺身用ゆでだこ … 250gほどCooked octopus for sashimi…about 250g
薬味ねぎ(細ねぎ) … 2束Green onions (thinly sliced)…2 bunches
紅しょうが … 100~120gほど
※紅しょうがが用意できない場合は、普通のしょうがを刻んで代用しても!Red pickled ginger…about 100-120g

※If red pickled ginger is not available, you can use regular ginger chopped as a substitute!
好みで天かす … 適量Tenkasu (tempura scraps)…as needed
焼く際の油 … 適量Oil for cooking…as needed
食べる時にソース、ポン酢、かつお節、青のり等適宜Sauce, ponzu, bonito flakes, nori, etc. as desired for serving
だし汁 … 1400mlDashi broth…1400ml
卵 … 4個Eggs…4
小麦粉(薄力粉) … 350gWheat flour (cake flour)…350g
塩 … 小さじ1Salt…1 teaspoon
醤油 … 大さじ1Soy sauce…1 tablespoon
みりん … 大さじ3Mirin…3 tablespoons

Steps

Ingredients for Takoyaki Batter and Filling (4-5 servings / 80-90 pieces)

Preparation of Dashi and Ingredients:

  • Prepare cooked octopus for sashimi (about 250g), green onions (regular and thin), and red pickled ginger.
  • Use homemade dashi for better aroma.
  • Cool the dashi before mixing with the batter.

Takoyaki Batter Recipe:

  1. Beat 4 eggs in a bowl.
  2. Mix in 400ml of cooled dashi broth, then gradually sift in 350g of flour.
  3. Add the remaining 1 liter of cooled dashi broth, 1 tsp salt, 1 tbsp soy sauce, and 3 tbsp mirin. Mix well.

Cooking Takoyaki:

  1. Heat a takoyaki pan with oil.
  2. Pour batter into the holes, add octopus, and sprinkle with chopped green onions and minced red pickled ginger.
  3. Cook until browned, then flip and cook the other side.
  4. Serve with sauce, mayonnaise, nori, and bonito flakes.

Additional Tips:

  • For a healthier option, add cabbage and konnyaku to the filling.
  • Adjust the seasoning and toppings according to your preference.
  • Be careful not to overfill your takoyaki mold!
